Ozone slurry ice is an innovative cooling technique to preserve aquatic animal products’ freshness by reducing seawater’s temperature with salinity between 15-40 ppt. This technology is 4 times more effective in preserving fresh quality in aquatic animal products than freshwater ice. Further, the ozone slurry ice effectively helps mitigate damage to fish skin texture and preserves fish’s fresh quality for use as food ingredients.
